A natural-process Ethiopian from Guji, sourced through Ture Waji's Sookoo cooperative and dried at their Suke Station. This lot pools coffee from 35 small-scale producers working within shade-forested systems. The profile leans restrained for a natural: jammy stone fruit and syrupy body anchor the cup, while floral notes and a whisper of citrus keep it from becoming heavy, finishing with milk chocolate depth. Brews well as pourover or immersion, where the delicate florals stay prominent.
