Hamasho Borena - Ethiopia

An anaerobic-fermented washed coffee from Bensa's high-altitude Hamasho Washing Station, sourced from 161 smallholder farmers across three villages. Unlike many anaerobes that lean funky and fermented, this one stays floral and refined—white jasmine and delicate florals leading, then pivoting to ripe tropical fruit, candied citrus, and white peach, all held together by a creamy sweetness. The 72-hour sealed fermentation intensifies rather than muddies the flavors, giving the cup an almost crystalline brightness. Best suited to pourover or immersion brewing, where those florals won't get lost.
