A natural-process Catuai from Daterra's Education Lot, grown on the SH3 cultivar—a climate-resilient variety developed through collaboration between the producer and research institutions. The cherries dried on the tree before harvest, concentrating the flavor into a bright Meyer lemon acidity held in tension with praline sweetness and dark chocolate depth. The interplay of citrus and cocoa makes this one sing as a pourover.
