The Bararantes family processes their own lots at Cerro La Cruz's micro-mill—a deliberate move toward quality control that paid off when Ruby became the first US roaster to buy from the operation in 2016. The result is velvety and decadently sweet, best showcasing its fruit clarity as a pourover or filter brew.
