Papayo's large, dense beans (named for their papaya-like cherries) carry tropical sweetness: lychee and candied orange notes over a silky, polished body. Light-roasted to let the variety's complexity shine through. This is a limited harvest from Aura Diaz's farm, where she has cultivated 11,000 trees over two decades of careful stewardship.
